The
butterfly above appears a lot like me
Our
parallel souls are serene and carefree
It
whisks through the sky with its fluttering wings
Not
sure if it worries of anything
The
butterfly above is black, but unique
It
carries on as if the world was asleep
Black
butterfly above, I can see you at night
Your
wings, your beam convey special light
Your
beautiful charm sends a warm embrace
Through
this gentle soul in that imaginary place
I
invite you to stay for as long as you like
Then
my days ahead will be filled with delight
Your
calm charisma I love and adore
And
is why I ask for it more and more
The
day will come that I will follow
For
now, I’ll await your presence tomorrow

Catfish
Gumbo
(recipe

Ingredients:
1
lb. catfish
1
lb. cut okra
1
can diced tomatoes
1
lb. beef smoked sausage, sliced in ½ inch
slices
1
large onion, cubed
1
small bell pepper, cubed
½
cup celery, diced
4
tablespoons oil
½
lb. shrimp, peeled & deveined
1
can tomato sauce
1
tablespoon flour
1
teaspoon file powder
1
teaspoon Cajun seasoning
4
tablespoons This –N- That seasoning (see p.
94)
1
can chicken broth
1
clove garlic, diced
1
bay leaf
Directions:
Heat 2
tablespoons oil in skillet.
Season catfish with seasoning and brown
on both sides.
Remove from heat and cut fish into 1 inch
pieces. Heat
2 tablespoons oil in stock pot.
Brown
flour and add sausage, onions, bell
pepper, celery, and garlic.
Add remaining ingredients to pot
and cook
on medium-low heat for approx. 45 minutes.
Add catfish and shrimp, then simmer for
20-30 minutes.
Best served over white rice with cornbread on the side.
